Spiced Carrot & Quinoa Salad (recipe for 1-2)
-2 carrots
-1 cup spinach or greens of your taste
-1 cup cooked quinoa
-2 tbsp crumbled light feta
-1 lime
-1 clove minced garlic
-1 stem chopped green onion
-1 tsp cinnamon
-1 tsp curry powder
-cracked pepper to taste
-2 tbsp olive oil
-grilled chicken breast optional
Cook the quinoa or use your quinoa leftover from a previous night (I cook my quinoa in my rice cooker with a 1:1 ratio to water). Peel and chop the carrots and mix with olive oil, garlic, crumbled feta, green onion, cinnamon, curry powder, and cracked pepper. Roast mixture at 350 C for 15 minutes. Once ready, cool, and mix with quinoa and lime juice. Eat over spinach or other greens of your taste. Add sliced chicken breast if you like.
An Easy Winter Warmer (serves 2)
-2 potatoes
-3 beets
-2 chicken breast or fish fillets of choice
-1 bunch kale
-2 minced garlic cloves
-1 tbsp fresh minced ginger
-1 lemon
-1 lime
-1/2 cup finely ground almond
-1/4 cup chopped basil
-1 tbsp oil
-2 tbsp butter
-Salt
-Fresh cracked pepper
-1 tsp fresh ground chili peppers or sambal oelek chili paste
Chop the potatoes and beets to boil together. Whether chicken or fish, you will prep in the same way. Wet in lime juice and toss through ground almond and chopped basil (add salt and pepper to taste). Add oil to a roaster and bake for 20 to 25 minutes at 350 C or until temperature ready. With fish, prep and refrigerate until after you put up the kale. Chop the kale and steam. Bake or fry the fish in oil until temperature ready. Drain the potatoes and beets and mash with garlic and butter. Drain the kale and season with ginger, garlic, butter, chili peppers or sambal, lemon, salt and pepper. Plate the mashed potatoes and beets with the kale overtop. Side with the chicken or fish.

Mango & Crab Crème Fraiche Canapés
-Package of 24 Siljan Shells
-1 cup fresh crab meat
-2 tbsp crème fraiche (found in the dairy section of your supermarket)
-Fresh ground black pepper
-Cilantro
-1 Lime
-1 Mango
Mix crab and crème fraiche; add pepper and lime to taste. Lay two to three cilantro leaves in the bottom of the siljan shell followed by 1/4 tsp chopped mango. Add a 1/2 tsp of the crab mixture. Top with cilantro.
